This salad is also rather affordable. Here in Estonia, a can of lentils costs 0,45 euros and I used half a can. It gets even cheaper, if you are using homegrown zucchini and tomatoes. It is a perfect meal, if you are craving a filling meal but don´t want to feel stuffed afterwards. Like after a workout or for a lighter dinner. Or a quick lunch. Happy cooking!
Time: 10-minutes
Serves: 1 - 3 people (main dish for 1, side dish for 2 - 3)
- half a zucchini (I used light green zucchini)
- couple of Tbsp oil
- 1 tomato
- half a can of lentils (one can is 14 oz / 400 g)
- a little over half a tsp of salt
- ground black pepper to taste
Directions:
Cut zucchini into strips. Heat up a pan. Add oil and zucchini strips. Cook for 5-minutes. Add cubed tomato. Cook for a couple of minutes. Add drained lentils, salt and pepper. Cook for a couple of minutes. Serve as a main or side dish. Or mix it with some mayonnaise and serve in tortilla wraps.
