Easy and delicious vegan gravy with onions (gluten free)


How's your November so far? Here in South-Estonia, we have endless snow coming down. There's little daylight, so if I want to take photos of my recipes, I have to be done before 2pm. But there's also many good things about this time of the year. Cozy indoor activities for example.

Since I'm going to Nepal in March, I've been reading a couple of good books about this gorgeous country. In addition to the books, I've been playing Civilization 6 (it's beautiful and great, but I still like the previous Civ more). We've also watched some really good shows like The Last Man on Earth (love the sick humor), Narcos (based on the almost unbelievable true events about Pablo Escobar) and also some old classics like The Walking Dead, Family Guy and so on. I also watched a couple of episodes of Sarah Jessica Parker's Divorce, but this kind of dry humor isn't for me. Maybe I'll give it a second chance.


But enough of the chatter. Let's get to today's new recipe. Since different holidays are approaching and the weather is much colder, I usually start to crave something heartier. I know I'm not alone. Mashed potatoes with gravy is a no-brainer. And don't be afraid, that's a vegan steak on the picture! I remember when one Tumblr user was so angry when she saw a huge meaty steak in her feed. Fortunately she learned soon enough that it was my seitan recipe and she was happy that there is a vegan version of a meaty and juicy steak.

If you're not digging seitan, you can also serve some delicious homemade vegan patties or these crispy lentil balls with your mashed potatoes. But this luscious onion gravy is just perfect with its peppery, nutmeggy flavor and creamy texture. It doesn't need any flour, so it's gluten free too. Enjoy!


Preparation time: 15 minutes

Serves: 2 - 3 people

  • 2 onions
  • 2 Tbsp oil
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp ground nutmeg
  • ½ cup / 120 ml water
  • ¾ cup / 200 ml vegan cooking cream (oat cream, soy cream or make your own cream!)

Directions:

Peel the onions, cut them into half and then thinly slice them. Heat up a pan, add oil and sliced onions. Cook for a couple of minutes. Add salt, pepper and nutmeg. Cook for a few minutes, until the onions are browner. Add water and let it simmer for a minute. Add cream and let it boil on higher heat for 5 - 7 minutes. Serve.
