No bake vegan peanut butter and cocoa cookies (4 ingredients, sugar free, GF)


I have been craving for chewy no bake healthy cookies for such a long time! I think the concept is genius: soft, peanutty, protein packed cocoa cookies that are sweetened with dates. Usually the base for no bake cookies contains pretty expensive ingredients. I wanted my recipe to be affordable and pantry friendly. So you only need four ingredients for these mouthwatering chewy little fellas!

I found them especially good after a sweaty workout. The cookies are super filling, since they contain a lot of peanuts. And of course they are just a nice treat at any time of the day. I just love when a sweet treat is healthy too! So you only need to do some grinding with your food processor or hand blender chopper attachment, form the cookies and eat. Not so bad, right?

They are really peanutty and have just enough sweetness. So if you love peanut butter, don't like super sweet cookies and don't want to spend a ton of time in the kitchen, these cookies are for you. Let me know when you make them! :)

Homemade peanut butter
Cookie "dough" ingredients

Preparation time: 10 minutes

Serves: about 12 medium cookies

Ingredients:

  • ½ cup / 100 g peeled peanuts (not roasted)
  • 15 dried pitted dates + 2 Tbsp water
  • ½ cup / 100 g roasted and salted peanuts
  • 2 tsp cocoa powder

Directions:

It's best to use a food processor or a hand blender chopper attachment for this recipe! I always use these for making peanut butter for example. It's pretty painful to make peanut butter with a blender, especially if you have a cheaper version. Blender almost always wants liquids to start the blending process.

Grind the peeled peanuts until you have a grainy flour. Put the ground peanuts into a bowl. Now grind the dates with some water until you have a date paste. It doesn't have to be super smooth, there will be some pieces. Add the ground dates to the ground peanuts. Now grind the salted and roasted peanuts until they become a smooth peanut butter. It can take a couple of minutes. Add the peanut butter to a bowl along with cocoa powder. Mix everything together until you have a wet cookie dough. Form little balls and flatten them to a cookie. Use a fork to press a little pattern onto each cookie and decorate each cookie with a roasted peanut. Enjoy!
