With all these gorgeous fresh apples in hand, a person is always in a need for a foolproof and simple apple cake recipe. I really wanted to create one where you wouldn't need an extra trip to the grocery store and you could have all the ingredients already in your pantry. At least I almost always have some flour, sugar, cinnamon, apples, baking powder and oil in hand.
My love really loves desserts. Cookies are his number one choice, but he also likes cakes. One time he mentioned that his great grandmother used to make an apple cake with tons of cinnamon. Like so much cinnamon you almost wouldn't see the apples beneath it. And he loved it. So I also tend to use some extra cinnamon. The cake will be really aromatic that way.
This apple cake is so simple that even a child could do it. Just combine the dry ingredients, whisk the sugar with wet ingredients, mix them together into a batter and pour it into a cake pan. Add apple slices, sugar and cinnamon and bake away. The cake will be really moist and soft and perfect with some peppermint or ginger tea.
Preparation time: 10 minutes active, 40 minutes passive. Total: 50 minutes.
Serves: 10 inch / 26 cm round cake pan. About 12 slices.
Ingredients:
For the batter:
- 1 cup / 150 g all-purpose flour
- 2 tsp baking powder
- ¼ cup / 75 g sugar
- 3 Tbsp / 50 ml oil
- 0,6 cups / 150 ml plant milk or water
- 1 tsp apple cider vinegar or white wine vinegar
For the apple topping:
- 17 ½ oz / 500 g sliced apples (about 5 medium apples)
- 2 Tbsp sugar
- 1 heaping tsp ground cinnamon
Directions:
Preheat the oven to 350 F / 180 C. Mix flour with baking powder. In another bowl, whisk sugar with oil. Add plant milk or water and vinegar. Whisk a bit more. When the oven has reached its temperature, mix dry ingredients with wet ones until you have an even batter. Grease a round cake pan and pour the batter in. Move the cake pan a bit, so the batter will spread out evenly. Add sliced apples, sprinkle with sugar and cinnamon. Bake for 40 minutes or until a toothpick comes out clean.
