Quick and refreshing cold tomato soup (gazpacho)


This was just what I needed on a hot summer day. A very quick and tasty cold tomato soup as known as Spanish gazpacho. Perfect when you don't want to sweat in the kitchen. You can also serve this soup in a big jug with some fresh herbs and thin lemon slices. DAYUM!

4-5 people

  • one big cucumber
  • 4 big and ripe tomatoes
  • 1 celery rib
  • 1 ¼ cup / 300 ml tomato juice
  • some salt and pepper to taste
  • some olive oil
  • fresh herbs

Peel and chop the cucumber and tomatoes. Slice the celery. Put the ingredients in a bowl, add tomato juice and other ingredients and blend until smooth. Serve right away or keep in the fridge.
