The first vegan fair in Estonia took place in 2011. I remember clearly how one nice girl came to my table and told me that this rice noodle recipe is her all-time favorite. I also love this recipe, otherwise I wouldn't share it with you. Again, it is so simple, cheap and tastes lovely.
- 1 pack of rice noodles
- 700 g white cabbage
- 1 carrot
- 250 g champignons
- 1-2 tbsp ground coriander
- 1-2 tbsp ground ginger
- soy sauce to taste
- sesame oil
- 3-4 tbsp oil
Boil the rice noodles, drain them and mix with some sesame oil. Set aside. Heat up the wok pan, pour some oil in it and add shredded cabbage and grated carrot. Fry for about 5 minutes stirring occasionaly. Add chopped champignons, ground coriander, ground ginger and soy sauce to taste. Fry until the cabbage is almost soft but still a little crispy. Serve with rice noodles.
