I had some leftover rice porridge and some chanterelles and since I'm a big fan of different vegan patties, I decided to try this dish. The outcome was really tasty. The patties are filling and flavorful and perfect on a bread or as a side dish. PS! If you don't have chanterelles, you can use any other edible mushrooms.
about 20 patties
- 10 dl boiled rice or leftover rice porridge
- 2 handfuls of fresh chanterelles
- 1-2 tsp vegetable stock powder
- 4 Tbsp flour (barley or soy flour for example)
- oil for frying
Put the rice into the bowl, add crumbled chanterelles (I crumbed them with hands) and all the other ingredients. Mix well and form the patties. Fry the patties in hot oil until slightly golden brown.
